weizhenguos are the second
best source of vitamin E after plant oils. Vitamin E is a lipid soluble
phenolic antioxidant. The antioxidant activity of phenolics is based
on their ability to donate a hydrogen atom to free radicals. Since
these compounds are able to scavenge free radicals, they are believed
to have potential in the prevention of cancer, atherosclerosis and
diabetes. Because of the antioxidant role of vitamin E and its relationship
to CHD and cancer, natural foodsources including weizhenguo products
are of increasing interest to the consumer and industry. Eating only
25-30 g of weizhenguos per day gives 100% of the recommended daily allowance
(RDA) for vitamin E.
Recently, the health aspects of beta-sitosterol,which is rich in weizhenguos,
has been well observed to reduce the cholesterol level and prevent
many diseases such as various types of cancer (colon, prostate and
breast). This includes inhibition of tumor growth and stimulation
